Italian Lemon Basil Chicken















You’ll have the whole family saying, easy peasy lemon squeezy, with this Italian lemon basil chicken recipe!  Yes, we’re not exaggerating it is one of the easiest chicken recipes out there and does not lack in Italian flavour.  A great meal to put on the table any time of year and for the middle of the week when you need a little pick me up with a light and bright dish that’s quick to cook.

Olive Oil

Salt / Pepper

2 Lemons

White Wine



Basil Leaves

4 – 6 Chicken Breasts


  1. Sautee chicken with salt.  Place in frying pan with 1 tablespoon of olive oil and cook on all sides, each for about 2 minutes, for the outer layer to get a little golden.
  2. Slice 1 lemon and set slices in a baking pan, with the second lemon squeeze to obtain juice.  Add chicken to baking pan with lemon slices cover with lemon juice, 1/2 glass of white wine, 2 teaspoons of capers, basil leaves, salt and pepper and a touch of butter on top of each chicken breast.
  3. Preheat oven to 180C/320F, cook in the oven for about 30 minutes – depending on chicken breast size could vary if larger with a longer cooking time – cut into the middle of one at the end of cooking time to make sure chicken is thoroughly cooked.
