Yes, we’re not exaggerating it is one of the easiest chicken recipes out there and does not lack in Italian flavour. A great meal to put on the table any time of year and for the middle of the week when you need a little pick me up with a light and bright dish that’s quick to cook.

4 – 6 Chicken Breasts
- Sautee chicken with salt. Place in frying pan with 1 tablespoon of olive oil and cook on all sides, each for about 2 minutes, for the outer layer to get a little golden.
- Slice 1 lemon and set slices in a baking pan, with the second lemon squeeze to obtain juice. Add chicken to baking pan with lemon slices cover with lemon juice, 1/2 glass of white wine, 2 teaspoons of capers, basil leaves, salt and pepper and a touch of butter on top of each chicken breast.
- Preheat oven to 180C/320F, cook in the oven for about 30 minutes – depending on chicken breast size could vary if larger with a longer cooking time – cut into the middle of one at the end of cooking time to make sure chicken is thoroughly cooked.
