Putting the Italian in Your Week Night Chicken Dinner Recipes

Winner winner chicken dinner! Yes, everyone tries there best to stay healthy during the week, and especially now with all the Whole 30 option and other diet crazes ready to kick start us into the new year, there’s no excuse not to stay on the lighter side.  But that doesn’t mean we have to sacrifice taste!

We have all gotten into the chicken rut.  A chicken dinner really is always a winner when you’re cooking at home for the family and trying to stay healthy.  After awhile though, we must all admit – myself included, that there comes a point when you just aren’t that creative anymore with your chicken recipes.

Here are some fantastic, easy to whip up, Italian chicken recipes that will guarantee taste, and healthiness on your dinner table! 

 

1. Italian Olive & Dried Tomato Chicken

Recipe : Use 6 chicken thighs, lightly salting on all sides.  Heat 2 tablespoons of olive oil and add chicken thighs to pan.  Add half a glass of white wine and let cook on high heat for a few minutes with wine before bringing down to a light simmer.  Add in olives diced in half, datterini tomatoes diced in half, sun-dried tomatoes  (add amount depending on your liking).  Cook on a medium – low heat for 45 minutes.  Chop parsley and sprinkle over chicken.  Serve hot.

 

2. Mandarin Italian Balsamic Chicken

Recipe : Slice 8 mandarins in half.  Place 1/2 cup of balsamic vinegrette in a small sauce pan with a tablespoon of butter, put on a low heat and add in mandarins slices.  Keep this on a low heat and cook down for about 30 minutes adding a teaspoon of brown sugar in the mix. (if the sauce looks too dense add a touch of water to make it less dense) While the mandarins are cooking, Salt chicken thighs on all sides, heat frying pan with a tablespoon of butter. Cook on all sides for 2 minutes per side and 10 minutes skin down, add in mandarins and balsamic cook down another 8-10 minutes.  Serve hot.

 

3. Lemon Basil Chicken

4. Italian Sage and Tropea Onion Chicken

Recipe :  Heat frying pan with olive oil, add in 3 chopped tropea onions with sage leaves and a garlic clove, lightly salt chicken breasts and add to the frying pan.  Flip chicken breasts on both sides to get flavouring into chicken, and add half a cup of white wine to chicken with heat on high.  Let it cook down a few minutes and bring heat down to a simmer. Cook another 12-15 minutes until chicken breasts are golden. Serve hot.
