Zucchini Ripieni

A great thing about zucchini is that the pretty much go well with everything.

Zucchini is definitely a staple in our kitchens which we always have on hand. And one of our favorite home cooked dishes is the zucchini ripieni.

Zucchini ripieni, stuffed zucchini, is a timeless classic recipe to serve for any occasion even Sunday lunch.  There are so many varieties of stuffing you can make that it’s hard to ever get tired of them.

INGREDIENTS 

6 Zucchini

8 Anchovy

2 Egg

Grated parmesan cheese

Grated pecorino cheese

Bread crumbs

INSTRUCTIONS:

Boil zucchini 10 minutes until tender, remove and let cool, once cooled scoop out the inside of the zucchini.

Make fill of egg, cheese and bread crumbs.  First whisk eggs, then add in grated cheese and mix.  Add in bread crumbs until mixture thickens. Place mixture in the scooped out area of the zucchini. Place in oven for 12 minutes at 180C.

Remove from oven and place anchovies and serve!
